Sweet Potato Ravioli with Curry Sauce

This recipe came from a book I bought my dad and then "borrowed", called 1,001 Lowfat Vegetarian Recipes. It was surprisingly quick to make as the wonton wrappers take no time to make unlike traditional pasta.

Ingredients for Ravioli

1 cup cooked, mashed sweet potato (I microwaved two medium-large sweet potatoes for 9 minutes in the microwave)
2 small cloves garlic, minced
1/2 teaspoon ground ginger
Salt and pepper to taste
Wonton Wrappers (Quantity is up to you and what kind of ravioli you want to make)

Preperation

Mix sweet potatoes, garlic and ginger; season to taste with salt and pepper. Spoon about 1 tablespoon potato mixture on wonton wrapper; brush edges of wrapper with water. Here you can top with a second wrapper to make a large sqaure ravioli, or you can fold it in half to make triangles, rectangles or any other shape you can come up with. Press the edges together to make a tight seal and repeat with remaining wrappers until filling is gone.

Heat about 2 quarts water to boiling in a large saucepan (I made the curry sauce while the water was heating up). Add 4-6 ravioli, reduce the heat to a simmer, and cook ravioli uncovered until they float to the surface and appear al dente )about 3-4 minutes. Remove ravioli with a slotted spoon; repeat cooking process with remaining ravioli. Serve with Curry Sauce.

Curry Sauce Ingredients

Vegetable cooking spray
1/4 cup finely chopped onion
4 cloves garlic, minced
2 tablespoons flour
2 teaspoons curry powder
1/4 teaspoon cayenne pepper
2 cups veggie stock
1 tablespoon cornstarch
1/4 cup dry white wine
Salt and pepper to taste

Preperation

Spray medium saucepan with cooking spray; heat over medium heat until hot. Saute onion and garlic for 2-3 minutes; stir in flour curry powder and pepper. Cook 1 minute longer stirring constantly.

Stir stock into saucepan; heat until boiling. Mix cornstarch and wine; stir into boiling mixture. Boil until sauce is thickened, about 1 minutes, stirring constantly. Season to taste with salt and pepper

Serving size is 4 Raviolis with curry sauce
