
The Sesame Tofu
The tofu is the first part of the recipe since the marinade is best made 24 hours in advance. The recipe is as follows:
1 pound extra-firm tofu, drained and pressed
1/2 cup mirin
3 tablespoons rice wine vinegar
1 tablespoon sesame oil
2 teaspoons Asian chile sauce
1-inch chunk ginger, peeled and coarsely chopped
2 cloves garlic, mashed
Cooking instructions:
- Combine all marinade ingredients in a wide shallow bowl.
- Preheat oven to 400 degrees F
- Cut the tofu widthwise into eight equal pieces. Marinate for at least 1 hour (24 hours is best) flipping half way through.
- Place the tofu on a baking sheet and bake for 20 minutes. Flip over and bake another 10 minutes. Place in the broiler for about 3 more minutes for extra chewiness.
Sesame Dressing
3 tablespoons roasted sesame oil2 tablespoons tahini
2 tablespoons rice wine vinegar
1 tablespoon low sodium soy sauce
Preperation:
Whisk ingredients together in a small bowl and set aside until neededTatsoi, Mizuna and Edamame Salad
1 1/2 cups shelled frozen edamame, thawed or cooked
2 cups tatsoi, leaves
2 cups mizuna
1 cucumber, peeled and sliced
1 green onion, sliced
toasted sesame seeds
Cooking instructions:
- Cook edamame according to package directions. Rinse under cold water to cool. Drain well.
- Add edamame, tatsoi, mizuna, cucumber, tofu and green onion onto a plate
- Drizzle with sesame dressing. Sprinkle with sesame seeds, and serve.

Taste and Our Opinion
I was very happy with the way this dish turned out. The tofu perfectly complimented the salad greens and the dressing. We used very little dressing since the tofu has so much flavor. The salad greens are very unusual and I think would not be tasty with a standard "american" dressing, but were great with the sesame dressing. We will definitely be making this again!
