Watermelon Radish...What do you do with it?

So I've had a really hard time finding recipes for the Watermelon Radish we received from our CSA. This time in our weekly newsletter the Tierra Miguel Foundation suggested thinly slicing the radish, adding a little bit of rice wine vinegar, and a slice of orange or tangerine. It was suprisingly light and sweet and incredibly beautiful as you can see!

Ingredients:

Watermelon Radish, sliced thinly
Orange or Tangerine, sliced thinly
1 Tablespoon Rice Wine Vinegar

Preperation (Simplest salad ever!):

  1. Cut up the Watermelon Radish and the Orange or Tangarine into thin slices.
  2. Pour the Rice Vinegar on the Watermelon Radish
  3. Stack the Watermelon Radish on top of the Orange or Tangarine slices
  4. Eat!
