So we just picked up our first CSA shipment and in it was:
- Arugula
- Mizuna
- Tatsoi
- Beets
- Bok Choy
- Corn
- Watermelon Radish
- Green Beans
- Cherry Tomatoes
- Heirloom Tomatoes
- Summer Squash
- Carrots
All of the vegetables in the box at my pick up site. I put the produce into my canvas reusable bags and then brokedown the box for the CSA to use for the next shipment.
The Arugula, Mizuna and Tatsoi are all leafy vegetables used for various salads. Both the Arugala and the Mizuna are very spicy, peppery, leafy greens. The Tatsoi is an Asian spinach mustard that is spoon like in shape. It has a very short storage life span and needs to be consumed quickly. 
We will be eating lots of spicy salads this week!!
We also received red Beets and some Watermelon Radish.
Because the Beets still have the greens still attached it's like we got two vegetables in one! The greens are very nutritious and can be used in salads and other recipes.
Watermelon Radish is an incredibly beautiful mild radish. When you cut them open, they look exactly like a Watermelon. Not quite sure what to do with it yet!
Both the Beets and the Radish should have the greens seperated from the roots before storing them in the fridge. This allows both the roots and the greens to stay fresh and keep all their nutrients.
The Bok Choy is a cabbage used in lots of Chinese dishes.
We will most likely use it in some stir-fry, but we will have to see how we feel. Bok Choy should be stored in a plastic bag in the fridge for no more than 3 days.
We were also given Corn still on the cob. Not sure what variety of Corn, but it looks tasty.
Will most likely be used as a side for a baked tofu or tempeh entree.
We received a hugh bag of green Beans. Thankfully they can be stored in their plastic bag for several days without any loss of quality or nutrition. 

In the package there was also a container of yellow Cherry Tomatoes and one beautiful red/orange Heirloom Tomato.
Cherry tomatoes should be kept out of the fridge and away from sunlight.
Heirloom tomatoes are a big favorite in my house and are consumed quickly since they can spoil quickly.
The last two items in the box were Summer Squash and Carrots.
The Summer Squash is a subset of squash that is
harvested when immature. It can be stored for longer than most of the other items in our CSA.
The Carrots came with their stocks completely attached and hugely leafy and green. These carrots are thick and stocky and look very edible. They can keep up to a couple of weeks in the fridge with the right temp and humidity.
Before taking photos I lined up some of the CSA produce on the counter and was amazed to see that it took up the entire section of counter. Very cool too see all that green!
I can't wait to share with you what we made with all this amazing organic produce.
